These traditional pancakes made from pinto beans are tasty and inexpensive. They can be served as a meal or as a snack.
Ingredients
2 Cans Lucks Pinto Beans
Pour Flour, mix to thickness like cornbread.
Salt and pepper to taste
1 lb Bacon fried and drained
1 small onion diced
Shredded cheddar cheese
Instructions
Mix all ingredients and crumble up bacon pieces in the mixture. Put cooking oil or bacon grease in skillet . Spoon cornbread-like mixture in patties and fry until brown on both sides.
You can add a small side salad with these and you have a complete meal.
