This is a recipe I got from my grandmother. This was her ‘go-to’ recipe for years, especially when someone in the family was sick.
It is delicious and very filling. She is no longer with us, but she would be so proud that I’m sharing her go-to recipes with everyone.
Ingredients
- 3 or 4 Large Potatoes
- 1-Medium Onion
- 3- Cups Skim Milk or Regular Milk
- 1/4 Cup Butter
- Salt and Pepper to taste
Instructions
Peel and dice potatoes and onion, cover with water, and bring to a boil. Lower heat and cook until tender about 35 minutes.
Drain three-quarters of the water off and add the milk. Simmer over low heat for 15-20 minutes. Mash the potatoes with a hand masher to make the soup thicken. Add butter, salt and pepper to taste and garnish as you wish.
